A One Health approach: tackling antimicrobial resistance to protect health and well-being
Professor Azucena Mora Gutiérrez, Universidade de Santiago de Compostela
Prof. Gutiérrez is a Full Professor of Microbiology at the University of Santiago de Compostela and an international expert in antimicrobial resistance (AMR), food safety, and One Health. As an EUniWell Champion, her work focuses on advancing integrated AMR surveillance and identifying bioindicators that support evidence-based interventions across the human–animal–environment interface.
The project builds on more than 25 years of research and strong international partnerships with institutions such as the German Federal Institute for Risk Assessment (BfR), the University of Copenhagen, and the University of Porto. Prof. Gutiérrez also contributes actively to national and European agencies, including the Spanish Agency for Food Safety and Nutrition (AESAN), the Spanish National AMR Plan (PRAN–AEMPS), and the European Society of Clinical Microbiology and Infectious Diseases (ESCMID), where she serve on the EFWISG Executive Committee.
“Through this Champion role, I aim to connect scientific evidence with policy action, enhance food safety and well-being, and contribute to the SDGs – particularly those related to health, sustainable food systems, and environmental resilience. My commitment includes training young researchers, strengthening EUniWell collaborations, and expanding AMR awareness through public engagement and outreach. Together, these efforts will reinforce EUniWell’s mission and extend its impact beyond the Alliance.”
